May 29th, 2011 | Gluten Free Mozzarella Sticks

One of the things I’ve missed the most on my gluten free diet is cheese sticks. I always have to resist the urge to order them whenever I’m out with friends, and I’ve never been able to find gluten free ones in stores. So I decided to try making my own. You’ll need 3 bowls, gluten free bread crumbs, milk, dried parsley, mozzarella cheese strings, 2 eggs, gluten free flour, tomato paste, onions, garlic, oregano, salt, olive oil.

In 3 separate bowls combine the  following ingredients. Bowl 1: Gluten free flour, Bowl 2: 2 eggs & milk, Bowl 3: Gluten free bread crumbs and parsley.

• Cut the mozzarella sticks in half or thirds.
• Roll them first in the flour, than the eggs & milk, then the crumbs. Do this about 2 or 3 times.
• Place them on a tray and flash freeze them for about 20 minutes. This will make it easier to fry them without the cheese fully melting inside and creating a mess before they’re cooked. While they’re freezing, make the sauce.


• 1 can tomato paste
• finely chopped onions
• 1 clove minced garlic
• Dried oregano, basil, salt & pepper sugar to taste
• ¼ c water,
• 1tbsp olive oil and garlic salt.

Combine all the ingredients in a pot and warm. The sugar is to take out the acidity of the tomato paste, generally 2 pinches does the trick.

Fry the sticks in a little bit of oil until they are golden brown. I freeze some of them after they’re cooked and  reheat them in the oven at 350F for about 10 minutes for a quick snack.

So, last year I signed up for the 2011 project. I won’t lie, I didn’t finish my book in time and wasn’t happy with what I had done to send it in. It was still fun though, so I don’t consider it a waste of money.

This year, I thought I’d give it a second go. I was a little hesitant at first but the tour is coming to Canada this year and making a stop in Toronto. Last year all the locations for the tour were only in the states. I made a rule I’m going to actually schedule time once a week to sit down with my book and work on it.

If you’re unfamiliar with the Sketchbook Project, it’s basically a concert tour. But with sketchbooks. Anyone can sign up, (it costs 25$) and fill their sketchbook with your creative goodies. When it’s completed, you send it back (no later than January 31st) and it makes it’s way around the world with hundreds of other sketchbooks to museums & libraries!

However won’t ever get it back, it’s final resting place is the Brooklyn Library of Art. You can opt to pay an extra 20$ for your book to be digitally displayed in the online exhibit. (Or you could just, yknow scan it yourself..) The theme I picked this year was “Fill me with stories”. Wish me luck!

May 24th, 2011 | Victoria Day Weekend and May Flowers

Well, I spent most of the long weekend working. I was able to go out of town for one night, but mostly when I wasn’t at work I was playing in the backyard with the pups & taking photos. It actually was a lot of fun! I hope everyone had a great long weekend! What did all of you lovely people get up to?!

May 20th, 2011 | A Retro Backyard Picnic

My sister made these hamburger & ice cream cone cupcakes for a BBQ that she’s going to tomorrow. They reminded me of a 50’s diner, and inspired me. How fun would it be to have a retro & 50’s inspired BBQ/Picnic in your back yard!? Everyone gets to play dress up, have good food, and themed decorations.

So I decided I’m going to plan one for later on this summer and threw this together for a little inspiration. Just thought I would share! :) Hope everyone has a lovely long weekend, I’ll be working most of it.
