As a tea lover scones have been something that I miss the most when it comes to being gluten free. Last week I had a meeting over afternoon tea and decided to try making some gluten free ones. I honestly couldn’t tell the difference and even my dad (who hates all gluten free foods) loved them. In fact, he ate most of them.
♥ 1 3/4 cups gluten free rice flour
♥ 1/3 cup sugar
♥ 2 teaspoons baking powder
♥ 1/2 teaspoon xanthan gum
♥ 1/2 teaspoon salt
♥ 1/4 teaspoon nutmeg
♥ 1/2 cup (1 stick) cold butter
♥ 3/4 cup dried cranberries
♥ Zest of 1 orange
♥ Zest of 1/2 lemon
♥ 2 large eggs
♥ 1/3 cup cold milk
♥ 1 teaspoon gluten-free vanilla extract
Mix all of the dry ingredients, including the butter, together in a large bowl by hand. It will be very crumbly.
In a separate bowl whisk together the wet ingredients.
Combine the two together and either roll in to balls about an inch thick or use cookie cutters to cut shapes.
Place on a non-stick pan or on a tinfoiled pan and dust with icing sugar, a little bit of cinnamon and brown sugar.
Bake for 13-19 minutes or until they are slightly golden at 400F.
