Spinach and artichoke dip recipe, with step by step instructions. One of the best recipes for spinach and artichoke dip, If I do say so myself! ;)

I admit it. I have been in a bit of a cooking mood lately. The other day I came across this recipe for baked taco potato chips and decided it would be excellent with one of my favourite dips, spinach and artichoke. So I quickly went to the store (okay, I admit it.. I sent my dad) to grab all the ingredients. Here’s what you’ll need:

Spinach artichoke dip, potato taco chips, fruit salad

1. 8oz Cream cheese (1 brick)
2. 1/2 cup of artichoke hearts
3. Spinach (as much as you’d like)
4. 1/3 c Mayo
5. 1/2 cup parmesan cheese
6. 1/4 cup goat cheese
7. 1 Clove garlic, minced
8. 1/4 tsp garlic salt
9. Fresh Basil (I used the full package)
10. White onion, finely chopped
11. Shredded Mozzarella cheese
12. 1/4 cup milk

Step 1: Combine all ingredients except for the artichoke hearts and mozzarella into a saucepan and cook on low heat while stiring gently. Add the artichokes last, once all the cheese is melted and cook for about another 5 minutes. (If you are using canned or pre-packaged artichokes make sure you drain them first)

Step 2: Pour the sauce into a caserol dish. Sprinkle the shredded mozarella over top.

Step 3: Cook for 20-25 minutes at 350F

Step 4: Broil for about 5 minutes, to fully melt the cheese ontop.

Step 5: Enjoy with your favourite crackers, nachos, pitas, or with the potato taco chips that I posted above!
