Today I bring to you my favourite potato skin recipe, my very own! In my opinion, green onions, bacon bits, and cheese make everything taste better. So it’s no wonder why I love these potato skins so much.

Potato skins with bacon, cheese, green onion, and sour cream

1. 4 – 6 large potatoes
2. Green onion
3. Bacon bits
4. 1/4 tsp Olive oil
5. Fresh Parmesan, Mozzarella and Cheddar cheese, shredded
6. Grated Parmesan cheese
7. Paprika
8. Garlic Salt
9. Taco Seasoning
10. Italian Herb Blend Seasoning

Step 1: Scrub the potatoes under warm water, and cut into wedges. Scoop out most of the the potato, leaving only a thin strip of potato before the actual skin.

Step 2: In a small bowl combine oil, garlic salt, paprika, taco seasoning, grated parmesan cheese and Italian herb seasoning. Lightly dust the potato’s skins with this. At this point, I bake them for about 5 minutes at 475F for the outsides to set.

Step 3: Remove from the oven and flip over the skins so the inside is facing outwards. Dust the inside with the seasoning as well and then sprinkle on bacon bits, cheddar cheese, parmesan cheese, mozzarella cheese and green onion.

Step 4: Bake for about 10 more minutes (may take up to 15), until crispy and golden brown at 475F

Step 5: Top with sour cream or salsa and serve!
