March 20th, 2012 | gluten free pudding cake

Pudding cake has always been one of our favourite deserst in my family. Recently I altered our recipe to make a gluten free version. I tastes exactly the same! It makes it’s own sauce too, and you can do the entire recipe in one bowl

Gluten Free Pudding Cake

Step 1: in an oven safe bowl combine…

• 1 c gluten free rice flour
• 1/2 c sugar
• 1/2 brown sugar
• 1  tsp baking powder
• 1/4 tsp salt
• 1/2 tsp xanthan gum
• 3 tsp cocoa
• 1 c milk
• 1/2 c melted butter

Step 2: After you’ve mixed the batter together, on top sprinkle…

• 1/2 c brown sugar
• 1/2 c sugar
• 3/4 c cocoa

Step 3: pour over top 1 1/2 cups of boiling water. cook at 350F for 40 minutes. Super easy, right?

    Oh wooooow!!! I’ve made a very similar non-gluten-free version of this and it’s just as delicious as it looks!!

      Yes! The original recipe is regular flour and no xanthan gum for all you gluten friendly folks ;). I was heart broken at first when I realized I couldn’t have it any more… then I realized what am I talking about?! I can bake it without!

    Ohhhhh man that sounds & looks so good!  YUM.  I’ve never had pudding cake!  I’m going to have to change that.  ;)

      WHAAAAAT never?!?! Oh lady, you NEED TO. you can easily use normal flour and take out the xathan gum to make a regular version too
