February 13th, 2011 | Red Velvet Cupcakes and Butter Cream Icing
Red velvet cupcakes are one of my favourites. I recently made a batch, and decided to share the recipe!
First, here is the recipe for the cake:
1. 2 Cups all-purpose flour
2. 2 Tbsp cocoa
3. 1 Tsp salt
4. 1/2 cup softened butter
5. 1-1/2 cups granulated sugar
6. 1 Tsp pure vanilla extract
7. 2 eggs
8. 1 Tbsp Red-Red Icing Color
9. 1 cup buttermilk
10. 1-1/2 teaspoons baking soda
11. 1 Tsp white vinegar
Preheat the oven to 350F and bake them for about 30-35 minutes.
Buttercream Icing
1. 1/2 cup solid vegetable shortening
2. 1/2 cup (1 stick) butter or margarine softened
3. 1 teaspoon clear vanilla extract
4. 4 cups sifted confectioners’ sugar
5. 2 tablespoons milk
